Ingredients
- DROP DUMPLINGS:
- 6 cups cubed peeled potatoes
- 1-1/4 cups sliced celery
- 1/2 cup chopped onion
- 5 cups water
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- butter
- chopped parsley
- 1 cup sifted flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1 teaspoon parsley flakes
- 1/2 teaspoon summer savory
- 1 egg
- 1/2 cup milk

Step 1
In a kettle, combine potatoes, celery, onion, water, salt and pepper, bring to a boil. Reduce heat and simmer until vegetables are tender, about 1 hour. With a potato masher, mash most of the vegetables.
DROP DUMPLINGS:
For dumplings, sift together dry ingredients, stir in herbs, beat egg and milk together and add to dry ingredients, stir just until moistened. Then combine, bring soup back to boil, turn burner low, drop dumplings by tablespoonful into soup. Cover tightly and simmer gently 20 minutes do not lift lid. Serve with pat of butter and sprinkle of parsley.
