Summer Leek, Tomato and Bacon Tart

Ingredients
- 1 pre-baked crust
- 2 oz bacon
- 3 Tbsp butter
- 4 leeks, white and light green parts only, thinly sliced
- 6 large eggs
- 1 c whipping cream
- 1/4 c milk
- 1 tsp salt
- white pepper
- 1 medium tomato, shell only, diced

Preparation
Step 1
Heat oven to 300. Set aside warm crust on a baking sheet.
Cook bacon in a large skillet. Set aside on paper towel. Discard grease, do not clean pan. Melt butter in same pan over medium heat. Add leeks. Cook until soft but not browned, stirring often. Set aside.
Whisk eggs, cream, milk, salt and pepper in a medium bowl. Stir in bacon, leeks. Ladle into warm crust, fill to within 1/8" from top. Dot with diced tomatoes.
Bake until browned and puffy, about 1 hour, 10 minutes.
Let rest on rack for 15 minutes.
Serve warm or at room temperature.
