- 1 head of Cauliflower, cored and cut into medium florets
- 2 tablespoons warmed Bacon Fat
- Sea Salt and Ground Black Pepper
- 1 cup Cheddar, freshly grated {Like Kerrygold}

Preparation
Step 1
Preheat your oven to 450 degrees. In a large bowl toss the cauliflower florets with the two tablespoons of bacon fat. Scatter the florets on a rimmed sheet pan {preferably aluminum}, and season with sea salt and pepper. Cook until tender, about 20 minutes, tossing halfway through. Finally scoot the cauliflower to center of sheet and top with the cup of grated cheddar. Return to oven and cook until cheese melts, about 2 minutes. Toss again before serving.
