Ingredients
- 4 boneless, skinless chicken breast halves
- 2 T chopped garlic
- 2 T curry powder
- 2 T vegetable oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chutney
- 1 bunch scallions, sliced into 1 inch pieces, including part of the green

Step 1
1. Place chicken breast halves between sheets of plastic wrap. Lightly pound until thin.
2. Combine garlic, curry powder, 1 T oil, s/p and rub over chicken.
3. Heat remaining 1 T oil in large nonstick skillet over medium high heat. Add chicken, saute 4 minutes per side.
4. Transfer chicken to plate. Spread chutney evenly over each piece.
5. Add scallions to remaining pan juices and cook over medium heat for 3 minutes. Spoon over chicken.
