Step 1
Wash it well, and remove the neck and giblets. Dry w/paper towels, salt the cavity, and stuff as desired. Rub the outside well with pure olive oil.
Put turkey breast down in a roasting pan uncovered. Put into a 350 degree oven for one hour to destroy bacteria on the surface. Then adjust the heat to 200 degrees for any size turkey.
Cook three times longer than moderate-temperature roasting.
20 lbs. = 15 hours
15 lbs. = 12 hours
23 lbs. = 17 hours
15 mins. per lbs. times 3 for large turkey. 20 mins per lbs. times 3 for smaller turkey.
Will not overcook even if cooked additional 3-6 hours.
