Ingredients

  • 1 large chopped carrot
  • 1 medium chopped onion
  • 2 teaspoons canola oil
  • 1.25 oz. packet low-sodium chili seasoning
  • 1/2 cup no salt added tomato sauce
  • 1 1/2 cups no salt added V-8 juice
  • 14.5 oz. undrained fire-roasted diced tomatoes
  • 15 oz. can EACH rinsed - low-sodium black beans and great northern beans
  • 1 medium EACH diced - zucchini and yellow squash
  • 1/2 cup frozen whole kernel corn, thawed
  • Water as needed
  • Toppings: cilantro, low-fat sour cream, green onions, low-fat cheddar cheese

Preparation

Step 1

Cook carrots and onion 7 minutes in hot oil in pot on medium. Stir in seasoning. Cook 2 minutes. Stir in remaining ingredients, except toppings.

Bring to a boil; cover, reduce heat to medium-low. Simmer for 30 minutes, stirring occasionally. Serve with toppings.
