Ingredients
- 8 cups zucchini, seeded, chopped and peeled
- Cook 15-20 minutes on stove-top
- 2/3 cup lemon juice
- Add
- 1 / cup sugar
- 1 t cinnamon
- 1/2 t nutmeg
- Cook 1 minute
- Crust
- 4 cups all purpose flour
- 1/2 cup sugar (original calls for 2 cups sugar)
- 1 1/2 cup cold butter
- 1 t cinnamon
- Stir into crumb-like mixture with a fork

Preparation
Step 1
Place ½ cup of crust mixture in zucchini
Place ½ of remaining mixture on bottom
Place remaining mixture on top
Bake at 375 degrees for 35-40 minutes
