Ingredients

  • 1 tablespoon butter
  • 1 small onion, chopped
  • 3/4 green bell pepper, chopped
  • 3/4 red bell pepper, chopped
  • 1 lb. pound turkey or pork breakfast sausage
  • lightly packed spinach chopped
  • 8 large eggs
  • 1/2 cup milk
  • grated cheddar

Preparation

Step 1

Melt butter in skillet over medium heat. Saute onion and both peppers until almost tender. Add sausage, breaking up the meat to brown. Sprinkle in spinach and stir until wilted.

In a medium bowl, whisk eggs, milk, and pinch of salt and pepper until blended. Spoon sausage mixture evenly in greased 9x13 pan. Pour egg mixture evenly over meat in dish. Sprinkle grated cheddar cheese on top if desired.

Bake at 325 degrees until eggs are no longer runny and cooked thoroughly and the cheese is melted (about 20-25 minutes).
