Ingredients

  • 3 c cooked rice
  • 1 lg tomato, seeded and chopped (2/3 c)
  • 3/4 c chopped sweet onion
  • 3 Tbsp snipped fresh cilantro
  • 3 Tbsp lemon juice
  • 2-3 Tbsp seeded and finely chopped fresh jalapeno
  • 2 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 avocado, chopped
  • 2 Tbsp lime juice
  • Shredded Romaine lettuce

Preparation

Step 1

In a large bowl combine rice, tomato, onion, cilantro, lemon juice, jalapeno, olive oil, salt and pepper.

Toss avocado with lime juice; stir into rice mixture. Cover and chill for 2-8 hours.

Spoon on top of shredded romaine lettuce.

Serve with lime wedges.
