Ingredients

  • 7 oz corkscrew pasta, cooked
  • 1-1/2 c cubed Swiss cheese
  • 6 oz sliced Genoa salami - strips
  • 1 c thinly sliced cauliflower
  • 1 c sliced zucchini
  • 1/2 c chopped green pepper
  • 1 small onion, thinly sliced
  • 2 medium tomatoes, added when ready to serve
  • 1/2 c sliced black olives
  • 1/4 c shredded Parmesan cheese
  • 1/4 c chopped parsley
  • 1/4 c vinegar - add a little sugar to taste - 3 Tbsp)
  • 2 garlic cloves, minced
  • 2 tsp dry basil
  • 1 tsp oregano
  • 1/2 tsp pepper
  • 3/4 c Hendrickson's Original Sweet Vinegar & Oil Dressing, Fat Free
  • (The recipe call for only 3/4 cup, but we usually use the whole bottle.)
