Ingredients
- 1 Tbs Olive Oil
- 3 cups chopped yellow onion
- 1 tsp chopped fresh thyme leaves
- 2 tsp kosher salt
- 1 tsp black pepper
- 3 Tbs worcestershire sauce
- 1/3 cup chicken stock
- 1 Tbs tomato paste
- 2 1/2 lbs ground chuck
- 1/2 cup dried bread crumbs
- 2 eggs, beaten
- 1/2 cup ketchup

Step 1
Heat olive oil in a medium sauce pan and then add yellow onions, thyme, salt and pepper. Cook over medium low heat, about 10 minutes, just until the onions are translucent. Off the heat, add worcestershire sauce, chicken stock and tomato sauce. Mix everything together and set aside to cool slightly.
Put the meat into a bowl and add cooled onion mixture. Add bread crumbs and eggs. Mix together, making sure you are not compacting it. Place on a jelly roll pan and shape into an even loaf. Spread the ketchup on top of the loaf.
Bake at 350 degrees for about 1 hour to 1 hour and 10 minutes.
Put a pan filled with very hot tap water underneath to keep meat loaf moist.
