  • 2 (10-ounce) packages frozen chopped spinach
  • 1 cup freshly grated Parmesan cheese
  • 1 1/2 tablespoons minced onion
  • 2 eggs, slightly beaten
  • 2 cups herb seasoned croutons, crushed
  • 3 tablespoons butter, melted

Preparation

Step 1

Preheat oven to 375°

Lightly grease baking sheets. Cook spinach according to package directions; drain well. Transfer to a large bowl. Add Parmesan cheese and onion. Blend in eggs. Stir in croutons and butter. Shape mixture into 1-inch balls. Arrange on greased baking sheets, spacing 1/2 inches apart. Bake until golden brown, approximately 15 minutes.

These can be prepared 2 weeks ahead, covered and frozen. Do not thaw before baking. Increase baking time to 20 - 25 minutes.
