There's no recipe for this bunny cake. a box mix will make two "Mama" cakes. The ingredients and instructions are for 2 mama bunnies. However, can use extra layer for 2 small baby bunnies, or can make bunny cupcakes with half the batter.

  • For Two Mama Bunnies You Need:
  • 2 - 9 " round cake layers, baked and fully cooled
  • 5 - 6 cups white frosting
  • 14 ounce package shredded coconut
  • Jumbo, large, and mini marshmallows
  • Red food coloring
  • Jelly beans

Preparation

Step 1

1. Cut one cake layer in half crosswise to form two half circles. Frost one side of a half circle, then top with other half, sandwiching them together. Place cake, cut side down, and rounded side up, on a cake platter. (Rounded side will become the bunny's back). Apply a thin layer of frosting (a crumb coat) to top and sides. Repeat with remaining cake layer. Chill in refrigerator for 30 minutes.
2. Apply a second coat of frosting to top and sides of cakes. Press coconut into the frosting of each cake to give each bunny's coat a furry texture, patting to adhere. Flatten jumbo marshmallows between your palms, then use scissors to cut thick slices from them for bunny ears. (Don't be surprised if the ears shrink a bit). Tint 1/4 cup frosting pink with red food coloring. Frost inside of ears pink. Affix ears to one end of each bunny, pressing to anchor them in the frosting. Flatten large marshmallows and apply one to each bunnies backside for a tail.
3. Use jelly beans as eyes and add jelly beans as a nose. Flatten mini marshmallows and apply as cheeks. Serve immediately or refrigerate up to 24 hours.
