- Chicken breast halves
- Capers
- Butter
- Cheese
- Fresh, salted tomatoes
- Black Beans
- Taco Seasonings
- Saffron rice
- Boar’s Head Mustard sauce

Directions
Wash and pat chicken dry, pound thin. In a heavy skillet with butter of Olive oil, fry salted and peppered chicken breasts, turning once. Add capers. When cooked through, mound grated cheese (of choice, Nanny uses Jack/Cheddar blend) on top of chicken. Top with fresh, salted tomatoes (red and yellow with green onions). Drizzle tomatoes and onions on top. Place 1 can of black beans, rinsed, with partial package ofTaco Seasoning mix into a pyrex dish and cook in preheated oven at 350 degrees until hot.
Serve with a Caesar salad with strawberry halves (Kiwi or pickled beets), pecans and fresh Parmesan cheese. Top with olive oil, salt and pepper.
