Ingredients
- Salad:
- 1/2 c Bulgar wheat
- 1 c water
- 2 chopped tomatoes
- 1 c chopped parsley
- 1 c chopped cucumber
- 1/2 c shredded carrot
- 1/4 c sliced green onion
- 2-1/4 oz can sliced black olives
- 1 Tbsp cilantro
- Dressing:
- 1/2 c picante sauce
- 2 Tbsp olive oil
- 1/4 tsp pepper
- 1/2 tsp salt
- 2 Tbsp lemon juice

Preparation
Step 1
In a medium bowl, combine Bulgar wheat and water. Let stand 30 minutes. Drain, squeezing out excess moisture.
In a large bowl, combine Bulgar wheat and remaining salad ingredients. Mix well and set aside.
In a small bowl, combine all dressing ingredients. Mix well. Toss with salad.
Refrigerate 30 minutes to blend flavors.
