Ingredients
- 8-10 clean redskin potatoes, quartered into large bite size pieces
- 2 heads of garlic
- olive oil
- kosher salt
- black pepper

Preparation
Step 1
Preheat your oven to 400 degrees. Toss the potato pieces with olive oil, salt and pepper. Spread potatoes on a foil lined baking sheet. Slice the top 1/3 off of a head of garlic to expose the cloves. Drizzle with olive oil and sprinkle with salt and pepper. Place the garlic on the same pan with the potatoes and into the preheated oven. Remove the garlic after 45 minutes, and continue cooking the potatoes for another 10 to 15 minutes longer, or until nice and golden. Let the potatoes cool slightly before removing them from the foil. Use a fork to remove the garlic cloves, and toss with the potatoes.
