Ingredients

  • 1 cup plain flour
  • 125 g unsalted butter, chopped
  • 75 g almond meal
  • 1/3 c caster sugar

Step 1

Place the flour and butter in a bowl and rub together with your fingertips until the consistency of coarse breadcrumbs. Stir in almond meal, sugar and a pinch of salt, then chill for at least an hour.

Break up chilled almond mixture over the baking tray, then back for 5 minutes until it begins to turn golden. Remove from oven and crush with the back of a spoon. bake a further 5 minutes, then remove and crush again. repeat once more until pale golden all over.
