Ingredients

  • 2 cans kidney beans
  • 2 cans black beans
  • 1-2 lbs boneless chicken breast
  • 2 medium onions
  • 2 green peppers
  • 2 chopped carrots
  • 1 -8 oz fresh chopped mushrooms
  • 1 -28 oz can tomatoes
  • 1 -28 oz can tomato puree
  • 1 or 2 chopped jalapeno peppers
  • 1/2 stick of butter
  • 2 t salt
  • 1/2 t pepper
  • 4-5 t chili powder
  • 4 t cumin
  • 2 cloves garlic
  • 2 T brown sugar

Preparation

Step 1

Brown chicken breasts in hot oil, in large pot with 1 clove garlic, 1 t chili powder and 1 t cumin. Set aside. Cube when cool.

In the same pot, sauté green peppers, onions, remaining garlic, mushrooms & carrots in ½ stick of butter with 2 t of chili powder and 2 t cumin. Add remaining ingredients: chicken, tomatoes, beans and rest of spices.

Simmer 3 hours or in a crock pot to simmer all day.
