Ingredients

  • 2 cups washed and coarsely chopped
  • potatoes
  • 1 cup chopped vegetables (onions, broccoli,
  • mushrooms, peppers)
  • 6 beaten eggs
  • 1 cup Kraft Tex-Mex shreds

Preparation

Step 1

Place potatoes (no need to remove skin) in frying pan. Cover with cold water. Bring to a boil and simmer until potatoes are soft. Drain.

Fry chopped vegetables in pan with the potatoes.

Add eggs and cheese shreds. Cook on low heat for 15 minutes. Cover for 5 minutes or until center is cooked.

Serve with a garden salad.
