Ingredients

  • 1 boneless pork loin roast (2 lb., fat trimmed, quartered)
  • 1 cup Hoisin sauce
  • 1 T. fresh grated ginger (or 1 t. ground ginger)
  • 1 package shredded cabbage
  • 1 1/2 cups shredded carrots
  • 1/4 cup slice scallions
  • 3 T. rice wine vinegar
  • 1 1/2 T. sugar
  • 20 flour (or wheat) tortillas, warmed

Step 1

Put pork, 1/3 cup Hoisin sauce and ginger in crock pot. Turn to coat. Cover and cook on low 6-9 hours or until very tender. Just before serving, use two forks to shred meat in crock pot. Toss cabbage, carrost and scallions with vinegar and sugar in a bowl. Spread each tortilla with about 1 tsp of remaining hoisin sauce top with 1/3 cup cabbage mixture and ¼ cup meat.
