Ingredients

  • 1 cup sun dried tomatoes, finely chopped, dried preferably
  • 1/3 cup extra virgin olive oil
  • 3 T finely chopped red pepper
  • 5 cloves finely chopped garlic
  • 6 oz. crumbled feta cheese
  • 2 T basil
  • 1/2 t ground black pepper
  • 2 t balsamic vinegar

Step 1

Add all ingredients in a bowl. Mix well and serve. Can be stored in fridge for up to 2 weeks (may need to add a bit more olive oil if stored).
Serve with crostine or crackers
