Ingredients
- 3 tbsp vegetable oil
- 2 lbs sausage
- 1 onion diced
- 1 green or red bell pepper
- 3 cloves garlic minced
- 1 jalapeno seeded and diced
- 1 14 oz can italian tomatoes drained and chopped
- 2 cups dried black beans picked over and rinsed
- 4 cups chicken browth
- 3 cups water
- Salt and Pepper
- 1/4 cup chopped cilantro plus more for garnish

Preparation
Step 1
1. Heat the oil until shimmering in a dutch oven. Add the sausage and cook over medium heat about 3 minutes. Transfer to a plate.
2. Add the onion, bell pepper, jalapeno and cook for 5 minutes. Add garlic and cook for 1 minute. Add the tomatos and cook for 5 minutes until liquid is evaporated. Add the black eyed peas, chicken broth, water. Season with salt and pepper and bring to a boil. Cover partially and simmer over low heat until black eyed peas are tender, 1.5 hours.
3. Add the sausages and add them to the stew along with any juices. Add cilantro and simmer for 10 more minutes. Garnish with cilantro and serve.
