Ingredients

  • 1/2 cup butter
  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1 (17 ounce) can whole kernel corn, undrained
  • 1 (17 ounce) can cream-style corn
  • 1 package Jiffy corn muffin mix
  • 3 eggs, beaten
  • 1 tsp pimiento, chopped
  • 1/4 tsp salt
  • 1/2 pint sour cream or yogurt
  • 1 cup sharp cheddar cheese, grated

Preparation

Step 1

Heat oven to 350 F.

Saute butter, onion and green pepper lightly. Pour into a 9-inch-by-13-inch casserole pan. Add beaten eggs, cream-style corn, whole kernel corn (do not drain), muffin mix, salt and piminetos. Drop sour cream or yogurt on top and sprinkle with grated cheese. Bake for 45 minutes.
