Ingredients

  • 1/2 cup chocolate chips
  • 1/2 cup margarine
  • 1/3 cup dry sweetener
  • egg replacer, equal to 1 egg
  • 1 tsp vanilla extract
  • 3/4 cup flour
  • 2 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 3 cups soy ice cream, slightly softened

Preparation

Step 1

Preheat oven to 325F.

In a small saucepan on medium heat, melt the chocolate chips and margarine until well combined, stirring constantly. Remove from heat and set aside. In a large bowl, stir together the sweetener, egg replacer, and vanilla. Add the chocolate mixture and mix well. Add the flour, cocoa, and baking powder, and stir together until just mixed. Transfer batter to a cookie sheet lined with lightly oiled parchment paper. Spread evenly and bake for 12-15 minutes or until top looks just cooked. Let cool, carefully remove paper, and cut cookie in half. Spread ice cream over one half of cookie, and top with other half. Wrap in wax paper and freeze for 4 hours. Remove paper, and cut into sandwiches.
