Ingredients

  • 1 tsp Extra Virgin Olive Oil
  • 1/2 Red Onion, small sliced
  • 2 cloves Garlic, minced
  • 2 tsp Ginger root, minced
  • 3/4 cup Long Grain and Wild Rice
  • 1/3 cup Red sweet pepper sliced
  • 1/3 cup Orange sweet pepper sliced
  • 1/3 cup Yellow sweet pepper sliced
  • 2 cup Chicken stock, low sodium
  • 2 Green onions, chopped
  • 1 Lime, cut into wedges

Preparation

Step 1

1. Heat olive oil in a medium saucepan over medium heat.

2. Add red onion, garlic and ginger and sauté until onions begin to soften, about 2 minutes.

3. Add long grain and wild rice and stir for 1 minute.

4. Add peppers and chicken stock and bring to a boil. Cover and simmer until rice is tender and chicken stock has been absorbed fully, about 15 minutes.

5. Stir in green onions. Remove from heat and let stand 2 minutes.

6. Serve with fresh lime juice squeezed over top.
