Fish Sticks with Old Bay Mayo

Ingredients
- 3/4 cup mayonaise
- 2 tsp lemon juice
- 2 1/2 tsp old bay, divided
- 2 scallions minced
- 1 tsp hot pepper sauce
- salt + pepper
- 4 large egg whites (or 2 whole eggs)
- 1 cup yellow cornmeal
- 1/2 cup flour
- 1 1/2 pounds cod fillets, cut into 3/4" by 2 1/2" strips
- 1 cup oil

Step 1
1. Preheat oven to 200. Whisk may, lemon juice, 1 1/2 tsp old bay, scallions, hot sauce in medium bowl. Season with salt and pepper.
2. Whisk egg whites / eggs, 1 tsp salt and 1/2 tsp pepper in shallow dish until frothy. Whisk cornmeal, flour, and 1 tsp old bay in 2nd shallow dish. Pat fish dry with paper towels and season with salt and pepper. Toss fish strips in egg mixture and then cornmeal.
3. Heat oil until just smoking. Fry fish 2 to 3 minutes per side. Drain on paper towels. Serve with mayo mixture.
