Ingredients

  • 1/3 cup veg oul
  • 3/4 c milk, divided, room temp
  • 1 egg room temp
  • 1 tsp vanilla exact
  • 1 cup sugar
  • 2 cup sifted cake flour
  • 2 tsp baking powder
  • 2 tbsp potato starch
  • 1/2 tsp salt
  • 1/2 cup chopped pecans
  • 6 peaches, skinned, grilled or roasted and pureed

Preparation

Step 1

1. preheat oven to 375
2. in a mixing bowl combine flour, sugar, baking powder, starch, salt and pecans, mix with a whisk or sift together to ensure ingredients are fully incorporated
3. add the veg oil, egg and half of the milk to the dry ingredients, mix until combined
4. then add remaining milk peaches and vanilla. Stir until thoroughly combined about 1 min
5. fill cupcake tray halfway with the batter
6. bake at 375 for 20-25 min until toothpick comes out clean
7. cool for 5 min and then place on rack unless using the following topping, then follow the recipe below

Praline Topping
1/4 cup melted butter
3/4 cup brown sugar
18 pecan halves

combine melted butter and brown sugar, as soon as cupcakes come cout of the oven, spoon mixture over them. Place pecan half on each promptly return them to the oven for 5 min
