Ingredients

  • 3/4 lb green beans
  • 1/2 medium sized shallot
  • 1 Tbls white wine vinegar
  • 2 Tbls dry white wine
  • 8 Tbls cold unsalted butter
  • 2 Tbls frozen orange juice concentrate
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper

Step 1

Blanch green beans in boiling salted water for 3 mins. Drain and immediately plunge into cold water for 30 seconds. Remove and set aside. Place finely chopped shallot, white wine vinegar, and white wine in a small pot and bring to a simmer over medium heat until reduced by 2/3, about 3 mins. Reduce heat to low and whisk in butter, incorporating each tablespoon fully before adding the next. Remove from heat. Add frozen orange juice concentrate, salt and pepper. Pour over green beans and serve immediately.
