  • 2 Tbls EVOO
  • 3 cloves garlic, sliced
  • 1-1/2 grated Parmesan cheese
  • 1/2 lemon

Step 1

Line up green beans on a chopping board. Cut off the stalks, but leave the wispy ends. Put beans into a large saucepan of boiling water with the pinch of salt and cook for about 6 mins. Test one - they should be soft, but not squeaky. Drain in a colander, reserving some of the cooking water and set aside to steam dry. Put pan back on heat, add oil and garlic and saute until garlic starts to turn golden. Add the beans and toss to coat them in the garlicky oil. Add a ladleful of the reserved cooking water, parmesan, and juice from 1/2 lemon. Stir and simmer until the water and cheese start to form an oozy, sticky sauce, then remove from the heat and serve immediately.
