Ingredients

  • 1 large sweet potato (about 1 lb), peeled and cut into 1/2 inch dice
  • 1 lb pork tenderloin, cut into 1 inch pieces
  • 14.5 oz can of diced tomatoes (we like fire roasted or use low sodium)
  • 1 small can of diced green chiles
  • 1 garlic clove, minced
  • 1/4 cup orange juice
  • 2 medium scallion, chopped (green parts only)
  • 1/2 tsp salt
  • 1/4 tsp ground cumin
  • 1/4 tsp black pepper
  • 1 1/2 Tbs fresh lime juice
  • 2 Tbs cilantro, fresh, chopped

Preparation

Step 1

Put everything in a 4- 5 quart crock pot except the lime juice and cilantro. Cover and cook on low setting for 7 hours.

Stir in the lime juice and cilantro and cook for 5 minutes more.
