Cuban Style Pork and Sweet Potato Chili

Ingredients
- 1 large sweet potato (about 1 lb), peeled and cut into 1/2 inch dice
- 1 lb pork tenderloin, cut into 1 inch pieces
- 14.5 oz can of diced tomatoes (we like fire roasted or use low sodium)
- 1 small can of diced green chiles
- 1 garlic clove, minced
- 1/4 cup orange juice
- 2 medium scallion, chopped (green parts only)
- 1/2 tsp salt
- 1/4 tsp ground cumin
- 1/4 tsp black pepper
- 1 1/2 Tbs fresh lime juice
- 2 Tbs cilantro, fresh, chopped

Preparation
Step 1
Put everything in a 4- 5 quart crock pot except the lime juice and cilantro. Cover and cook on low setting for 7 hours.
Stir in the lime juice and cilantro and cook for 5 minutes more.
