Ingredients

  • 1 lb. dry small Red Beans, pinto also works well
  • 4 tsp. Adobo with pepper
  • 1 lb. ground beef
  • 2 small onions, chopped
  • 1 cup green pepper, chopped
  • 4 cloves garlic, minced
  • 1/4 cup tomato paste
  • 2 (16 oz.) cans whole peeled tomatoes
  • 2 Tbsp. chili powder
  • 2 tsp. cumin
  • 2 Tbsp. fresh cilantro, chopped
  • salt and pepper, to taste

Preparation

Step 1

Cover beans with water and soak overnight; or use quick cooking method. Drain beans.

Gently cook soaked beans in 8 cups water until tender (about 1 1/2 hr.), adding more water if necessary. Drain.

In a large skillet over medium high heat combine adobo, beef, onion, pepper, and garlic. Cook until meat is browned. Stir in tomato paste and cook 1 minute. Stir in remaining ingredients and beans. Reduce heat and simmer uncovered about 20 minutes. Serve over rice or with your favorite chili toppings.
