Step 1
Let chicken stand 30 minutes at room temperature. Prepare grill for indirect grilling over medium heat. Place a shallow pan ½ full of water at the edge of the grill rack. Add the wine to the center cup of the vertical roaster. Place chicken on roaster away from heat. Cover cook till instant read thermometer at the thickest part of the thigh reads 70 degrees Fahrenheit, about 2 hours
