Ingredients

  • 8 plum tomatoes halved lengthwise
  • Olive oil enough for the tomatoes to sit in (some say enough to cover the tomatoes)
  • 1 clove garlic halved lengthwise
  • salt and pepper
  • pinch sugar

Preparation

Step 1

1. Preheat oven to 225
2. Sprinkle cut sides of tomatoes with pinch of salt, pepper, sugar.
3. Allow to sit for 10 minutes.
4. Transfer tomatoes to oven proof pan or casserole.
5. Pour oil over tomatoes to cover them completely (or sit in oil).
6. Add garlic to the oil.
7. Bake uncovered for 45 minutes to an hour. When done they will be tender and skins will be wrinkled. Check occasionally to make sure oil does not boil.
8. Serve over bread.
