Ingredients
- 1 eggplant, peeled and sliced into circles
- garlic or italian breadcrumbs
- 1 beaten egg
- 1 box of thin spaghetti noodles
- spaghetti sauce of your choice

Preparation
Step 1
Dip the eggplant slices into the egg mixture to coat and then dip it in the breads crumbs to coat. Place slices into a hot pan with some oil and fry until golden brown. Do this until all slices are fried.
Place slices onto a lightly greased baking sheet. Bake at 300 degrees for 10-15 minutes.
Serve over bed of cooked noodles and ladle sauce over dish. Sprinkle grated parmesean or mozzarella cheese over dish (optional).
