Ingredients
- Preheat oven to 350
- 8 eggs beaten until frothy
- 1/4 C flour
- 1 tsp baking powder
- 1 TBS Cilantro
- 1/4 C shredded Monterey Jack Cheese
- 1/4 C shredded mild cheddar
- 2 4 oz cans chopped green chiles
- 24 oz carton cottage cheese (low fat)
- 1/2 to 1 cup mushrooms, optional
- Mix all ingredients, BUT RESERVING the mild cheddar cheese to sprinkle on top
- 9 X 9 pan greased

Cooking time 40mins
Preparation
Step 1
Mix all but cheddar cheese together. Sprinkle cheddar on top.
Let set 10 minutes after baking, before cutting to serve.
