Ingredients
- BISCOTTI:
- 1/4 cup margarine, at room temperature
- 1/2 cup light brown sugar
- 1 egg
- finely grated rind of 1 small orange
- 2 tsp. freshly squeezed orange juice
- 1 1/2 cups flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 cup cornmeal
- confectionery sugar for dusting
- GLAZE:
- 1 cup confectioners sugar
- 1 tsp. grated orange peel
- 5-6 tsp. orange juice

Step 1
1. Preheat oven to 325. Line a large baking sheet with parchment paper.
2. Cream together margarine and sugar. Add rest of cake ingredients. Kneed with hands until combined.
3. Place dough on baking sheet in 2 rectangles. Bake for 22 minutes. Remove from oven and let stand for 5 minutes. Using a sharp knife cut into strips. Space them out and return to oven for 8 minutes.
4. Dust half with confectioners sugar, and the other half spread glaze in a zig- zag fashion.
5. For the glaze combine the orange peel and sugar. Then add the juice until thick and moistened.
