Ingredients

  • 1 pound thin-sliced chicken breast
  • 1 (10 oz.) container (about 2 c.) freshly chopped Cajun trinity (onion, celery and green pepper)
  • 4 oz. sliced mushrooms
  • 1 (15 oz.) can Italian-style diced tomatoes (with garlic and Italian spices)
  • 1/2 c. white wine

Step 1

1. In a large, lightly oiled saucepan over medium-high heat, sear the chicken breast until lightly browned, about 3 to 4 minutes per side.

2. Add the mixed chopped vegetables and the mushrooms. Cook, stirring occasionally, for 5 minutes.

3. Add the tomatoes and wine, cover and simmer over medium heat for 10 minutes.
