Ingredients

  • 3 eggs
  • 2 1/2 c. milk
  • 1 1/4 c. flour
  • 1 Tbls. sugar
  • 1/2 tsp. salt
  • 2 Tbls. melted butter
  • 1/2 tsp. vanilla, optional

Preparation

Step 1

In a blender, combine all ingredients above until smooth.
1. Heat a 10 inch non-stick skillet over medium heat until very hot.
2. Lightly butter skillet & pour ½ c. of batter into it.
3. Swirl pan with batter to expand to a thin layer.
4. Cook until bubbles form & pancake is golden brown on bottom, about 1-½ min.. Flip turn & continue to cook for about one more minute.
5. Remove from fry pan. It should not be necessary to add more butter to pan for more pancakes.
Fold each pancake into quarters. Top with dollop of strawberries or other fruit & sprinkle with powdered sugar. Cool Whip & strawberries are my favorite!
