Ingredients
- 1 10 oz pkg. carrot nuggets frozen in butter sauce
- 2 c. flour
- 2 c. sugar
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 1 tsp. salt
- 1 c. plus 2 T. veg. oil
- 4 eggs
- 1 c. raisins

Preparation
Step 1
Cook carrots until thawed (or substitute real carrots, boil until tender & add butter).
Place carrots in blender & grate coarsely (DO NOT PUREE). Sift four, sugar, soda, powder, cinnamon & salt together in bowl. Add oil & beat. Add eggs one at a time, beating after each, until creamy. Stir in carrots & raisin. Pour batter into a greased 9X13" pan. Bake at 350º for 45 min. Cool before frosting.
Frosting: ½ c. butter, softened 1 (8 oz.) pkg. cream cheese (soft) 3 ½ c. powdered sugar ½ tsp. vanilla ½ c. coursely chopped walnuts -- Cream butter & cream cheese. Add sugar & vanilla & beat until smooth. Frost & sprinkle with walnuts
