Ingredients

  • 1/2 c. plus 1 t. sugar
  • 1/4 c. packed light brown sugar
  • 1/4 t. salt
  • 1 T. lemon juice
  • 1/2 t. grated lemon zest
  • 1/8 t. cinnamon
  • 2 1/2 lb. firm tart apples (about 5 med.) peeled & cut in 1/4" slices
  • 2 1/2 lb. firm sweet apples (about 5 med.) peeled & cut in 1/4" slices
  • 1 recipe Fool-Proof Vodka Pie Pastry
  • 1 egg white, beaten lightly

Preparation

Step 1

Mix ½ c. sugar, brown sugar, salt, lemon juice, zest, & cinnamon in large bowl. Add apples, toss.
Transfer to Dutch oven (don't wash bowl) & cook, covered, over med. heat, stirring frequently, till apples tender (15 to 20 min.).
Transfer to rimmed baking sheet to cool 30 min.
Adjust oven rack to lowest position. Put empty rimmed baking sheet on rack and heat to 425º F.
Set large colander over now-empty bowl; transfer cooled apples to colander. Shake colander to drain off as much juice as possible. Discard juice. Transfer apples to dough-lined pie pan. Sprinkle with lemon juice. Cover with second dough, pinch sides, trim & seal. Cut 2" slits in top of dough. Brush surface with beaten egg white and sprinle with remaining 1 t. of sugar.
Bake 45 to 55 min. on preheated baking sheet. Cool 1½ hrs.
