Ingredients

  • 2 pounds beef stew meat, trimmed
  • 4 medium potatoes, cut into
  • 1-inch chunks
  • 6 medium carrots, cut into
  • 1/2-inch chunks
  • 1 medium onion, chopped
  • 2 c. tomato juice
  • 1 c. water
  • 3 Tbls. quick-cooking tapioca
  • 1 tsp. sugar
  • 2 tsp. salt
  • 1/2 tsp. black pepper

Preparation

Step 1

1. Preheat oven to 350º F. Coat a 9- by 13-inch baking dish with nonstick cooking spray.
2. In baking dish, combine beef, potatoes, carrots, & onion; mix well.
3. In a large bowl, combine remaining ingredients; mix well. Pour over beef & vegetables.
4. Cover tightly with aluminum foil & bake for 2 to 2-¼ hours, or until beef & vegetables are tender.
Note: This is perfect dish for a make-ahead dinner. Just put it together, cover, & chill. Start baking it 2 ½ to 3 hours before serving timep
