Ingredients
- OPTIONAL:
- 1 pkg (8 1/2 oz) Cornbread Mix
- 2 1/2 C Milk
- 1/2 C Vegetable Oil
- 1 can (17 oz) Corn (cream style)
- 1 can (17 oz) Corn (whole kernel)
- 1 can (4 oz) Green Chilies (chopped)
- 4 Eggs (beaten)
- 2 C Cheddar Cheese (shredded)
- 1 Tbl Sugar
- 1 tsp Salt
- 1 small Onion (grated)

Preparation
Step 1
1. Combine cornbread mix, milk, and oil; mix well.
2. Stir in onion, corn, sugar, salt, and chilies.
3. Beat eggs and stir in mixture.
4. Stir in 1 1/2 cups of shredded cheese.
5. Pour into 9x13 casserole dish
6. Bake at 400 for 25 minutes.
7. Sprinkle remaining 1/2 cup of cheese over top and continue baking for 15-25 minutes.
