Ingredients

  • OPTIONAL:
  • 1 pkg (8 1/2 oz) Cornbread Mix
  • 2 1/2 C Milk
  • 1/2 C Vegetable Oil
  • 1 can (17 oz) Corn (cream style)
  • 1 can (17 oz) Corn (whole kernel)
  • 1 can (4 oz) Green Chilies (chopped)
  • 4 Eggs (beaten)
  • 2 C Cheddar Cheese (shredded)
  • 1 Tbl Sugar
  • 1 tsp Salt
  • 1 small Onion (grated)

Preparation

Step 1

1. Combine cornbread mix, milk, and oil; mix well.

2. Stir in onion, corn, sugar, salt, and chilies.

3. Beat eggs and stir in mixture.

4. Stir in 1 1/2 cups of shredded cheese.

5. Pour into 9x13 casserole dish

6. Bake at 400 for 25 minutes.

7. Sprinkle remaining 1/2 cup of cheese over top and continue baking for 15-25 minutes.
