Ingredients
- 6 tbsp butter
- 1 tbsp minced onion
- 1/2 cup flour or 1/3 cup gluten-free flour
- 3 cups chicken or vegetable broth
- 1/3 cup mined ham
- 1/2 cup chopped cooked chicken
- 1/2 cup finely grated carrots
- 2 tbsp slivered almonds, chopped
- 2 cups cooked wild rice
- 1/2 tsp salt
- 1 cup half-and-half
- 2 tbsp dry sherry (optional)

Step 1
Cook wild rice prior to starting soup.
1 cup wild rice and 2-3 cups of water. Cook for 1 hour or until wild rice has split open.
Cut and chop all ingredients before cooking anything!
Melt butter in large saucepan; saute onion until tender. Gradually blend in flour until butter is absorbed. Gradually add broth. Cook, stirring constantly until mixture comes to a boil. Boil 1 minute. Stir in rice, ham, carrots, almonds & salt; simmer about 5 minutes. Blend in half-and-half and sherry. Heat to serving temperature.
