Ingredients
- 1 cup plus 1 tbsp flour
- 1 tsp baking powder
- salt & pepper
- 1 cup whole milk
- 2 eggs lightly beaten
- 1 1/2 cups crumbled goat cheese
- 3/4 cups sun dried tomates packed in oil drained and chopped
- 3/4 cup grated parmesan cheese
- 2 tbsp olive oil
- 2 minced garlic cloves
- 2 14.5 oz diced petite tomatoes
- 2 tbsp shredded fresh basil

Step 1
1. Adjust oven rack to upper middle position and heat oven to 400. Grease 12 cup muffin tin. Whisk together flour, baking powder, 3/4 tsp salt, and 1/2 tsp pepper in large bowl. Whisk in milk and eggs. Stir in goat cheese, sun dried tomatoes. Divide evenly among greased muffin tin cups. Sprinkle each puff with 1 tbsp parmesan cheese and bake until golden brown. About 25 minutes.
2. Heat oil in large saucepan over medium heat until shimmering. Add garlic and cook for 1 minute. Add tomatoes and simmer until slightly thickened, about 8 minutes. Stir in basil and season with salt and pepper.
3. Serve muffins with tomato sauce.
