Roasted Broccoli with Garlic

Ingredients
- 4-5 lbs broccoli cut into florets
- 6 1/2 T olive oil
- 1 1/2 t. Kosher salt
- 1/2 t freshly ground pepper
- 4 cloves of garlic, peeled and sliced
- Juice of 1 lemon
- zest of 1 lemon
- 3 T. toasted pine nuts
- 2 T julienned fresh basil
- 1/3 cup freshly grated parmesan cheese

Step 1
Put the broccoli on a cookie sheet. Toss with 5 T. olive oil, salt and pepper. Now add 4 garlic cloves that are peeled and sliced and toss them in too.
Roast in a 425F oven 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
When it’s done, take it out of the oven–and zest a lemon over the broccoli, squeeze the lemon juice over the broccoli, add 1.5 Tbs more olive oil, 3 Tbs toasted pine nuts and 1/3 cup of freshly grated Parmesan cheese. Add 2 Tbs julienned fresh basil.
