Ingredients
- 1 large garnet yam
- 1 Tbls. butter
- 1/4 of a yellow onion, chopped (@ 1/2 c.)
- 3 Tbls. finely chopped pecans
- 3 Tbls. maple syrup
- 1/4 tsp. cinnamon

Step 1
1. Bake yam for 40 to 45 min. at 400º. This will bake yam nearly all way through, while still leaving it firm enough to slice when cool. Remove yam from oven & let it cool so that you can handle it. When yam has cooled, remove skin & slice it into 1-inch bite-size cubes.
2. Melt 1 Tbls. of butter in a large skillet. Add onion slices & pecans & sauté for a couple min. or until onion slices begin to brown.
3. Add sliced yams, maple syrup & cinnamon & sauté for 3 to 5 min., stirring often, or until yam pieces are hot & tenderl
