Ingredients

  • 2 egg whites
  • 2/3 cup ketchup, divided
  • 1 medium potato, peeled and finely chopped
  • 1 medium green pepper chopped
  • 1 small onion, grated
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 1/2 teaspoon pepper
  • 1 pound lean ground beef
  • 1 pound lean ground turkey
  • non dairy bread crumbs or panko crumbs to bind

Preparation

Step 1

In a large bowl, combine eggs, and 1/3 c. ketchup. Stir in chopped potato, green pepper, onion, garlic, salt, thyme, bread crumbs and pepper. Crumble the turkey and beef over the mixture and combine well. Shape into loaf.

Grease the meat loaf pan and transfer loaf into pan. Bake at 375 degrees for 45 minutes. Drain. Brush on the remaining ketchup on the top and bake an additional 5-10 minutes.

Meat thermometer should read 165 degrees to be cooked thoroughly.
