Ingredients

  • Filling:
  • 1 1/2 cups sifted flour
  • 1/4 cup sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1 slightly beaten egg
  • 1/3 cup blanched almonds, ground
  • 1/2 cup raspberry jam
  • 1 slightly beaten egg yolk
  • 1 tsp. water

Step 1

Sift together flour, sugar, baking powder, salt and cinnamon. Stir in brown sugar. Cut in butter until mixture is crumbly. Add egg and almonds; mix with fork.

Reserve 1/2 cup mixture for lattice and into it mix 2 tbsp. additional flour. Chill 1 hour. Meanwhile, press remaining mixture evenly into 9" square pan. Spread with raspberry jam.

Roll out reserved chilled mixture to 1/4" thickness. Cut in strips a little less than 1/4" wide. For lattice top, line up 11 strips across filling; then lay 11 strips diagonally across.

Combine slightly beaten egg yolk and water; brush over lattice.

Bake at 375 deg. for about 25 minutes. Cool and cut into bars.
