  • 2 lbs. boneless, skinless chicken breast (cubed) or ground chicken (If using ground chicken: brown first in 1 tablespoon of olive oil in a 2-quart saucepan, then drain.)
  • 2 cups chicken broth, preservative free
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup red pepper, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons of olive oil
  • 2 – 15 oz. cans cannelloni or northern beans
  • 2 cups frozen corn
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon coriander
  • 3/4 cup of sour cream or for a dairy free
  • substitute, use coconut milk
