Ingredients
- 2 lbs. boneless, skinless chicken breast (cubed) or ground chicken (If using ground chicken: brown first in 1 tablespoon of olive oil in a 2-quart saucepan, then drain.)
- 2 cups chicken broth, preservative free
- 1 cup onion, chopped
- 1 cup green bell pepper, chopped
- 1 cup red pepper, chopped
- 2 garlic cloves, minced
- 2 tablespoons of olive oil
- 2 – 15 oz. cans cannelloni or northern beans
- 2 cups frozen corn
- 2 teaspoons cumin
- 1 teaspoon oregano
- 1 teaspoon coriander
- 3/4 cup of sour cream or for a dairy free
- substitute, use coconut milk
